Bakery pricing: a practical guide for independent bakers

The short answer

A workable bakery price starts with the full cost of producing the order, then adds the profit needed to sustain the business. A useful starting formula is:

Price = ingredients + labour + allocated overhead + contingency + profit

This is a business-planning framework, not tax or accounting advice. Your market, skill, complexity and local obligations also affect the final price.

1. Calculate ingredient cost

Convert each package price into a cost per usable unit, then multiply that amount by the quantity used. Include fillings, decorations, boards, boxes and other consumables.

2. Pay for the baker's time

Count active production work such as preparation, baking, decorating, customer communication and cleanup. Choose an hourly labour amount deliberately instead of treating personal time as free.

3. Allocate overhead

Utilities, equipment, software, insurance, licences and workspace costs support multiple orders. Use a consistent allocation method and review it as volume changes.

4. Allow for uncertainty

Custom work can involve revisions, ingredient price changes or extra finishing time. A clearly defined contingency is more reliable than hoping every order goes exactly to plan.

5. Add profit and review the result

Profit is what remains after business costs and labour are covered. Review the calculated result against complexity, customer expectations and the value of your work without copying a competitor's number blindly.
